Healthy Easy Lunch Ideas: Green Eggs
OK, so the eggs themselves aren’t green, but I love adding spinach to m
y eggs when I scramble them. It’s a wonderful flavor combination, if you’ve never tried it, you should.
Green eggs would also make a wonderful breakfast, or brunch. You can make it even healthier by only using the egg whites, using an egg substitute, or tofu.
I usually have green eggs over a slice of whole grain toast. It’s a wonderful way to get your children to eat a little spinach. The spinach flavor doesn’t overpower, and you can tell them they’re pretending to be the Dr. Seuss character Sam I Am.
To make green eggs for one I saute a couple tablespoons of yellow onion, in a tablespoon of olive oil. Throw in a handful (or two) of fresh spinach leaves, then add 2 eggs (or 4 egg whites) and scramble it all together.
You can also use frozen spinach, just get as much of the extra water out as you can before you cook it.

I love this combination but usually have mine in a spinach omelet that comes with lots of cheese and other stuff. This is much healthier. Thank you Linette!
