Apple-Cinnamon Oat Bran Muffins
I was in a baking mood this weekend, and I have loads of apples I need to use up, soon! So I made several apple-y desserts and snacks. Some to eat now and some to freeze for later.
One of the healthier treats I made was an apple cinnamon oat bran muffin. Oat bran muffins are healthy, delicious, and loaded with fiber.
Apple-Cinnamon Oat Bran Muffins Recipe
2 1/2 cups oat bran
2 cups of peeled, cored, and chopped apples
2-3 tsp cinnamon
1/4 tsp nutmeg
1/4 cup evaporated cane sugar
2 tsp of baking powder
1/2 tsp of baking soda
2 eggs
1 cup of milk or water
2 Tbsp vegetable oil
Mix all the ingredients together in a large bowl. Spoon the batter into a muffin pan that’s been lightly sprayed with no stick cooking spray. Fill each cup about 3/4 full. Bake at 400`F for about 15 minutes.
This recipe will make about 12 muffins.
These freeze well. So make a double or triple batch, while you have the fresh apples, and put some in the freezer for a quick healthy snack later. Enjoy!
